In Japan, they say "Daichi tono Kakutoh" to describe traditional organic farming. "Daichi tono Kakutoh" means that it takes a lot of time and great effort to grow organic green tea. Although Japanese green tea is harvested two to four times throughout the year, high quality organic tea could be realistically harvested only once a year due to lack of nutrition caused by limited use of fertilizers.
Sencha (literally translates as decocted tea) is the most popular type of green tea in Japan. In fact, more than 80% of the green tea processed in Japan results in Sencha. Sencha is coveted for its refreshing and rejuvenating natural taste. Original Sencha is made from the finest young tea leaves. The traditional Japanese practice, not usually found elsewhere, of steaming green tea leaves immediately after picking preserves their unique properties. This steaming, sometimes referred to as the Sencha process, takes place within 24 hours of harvesting and inhibits the enzyme activity that causes oxidisation, enabling the tea to retain its bright emerald green leaf colour and preserving its nutritional benefits.
Sencha green tea is most suitable at homes, offices or anywhere at all. When brewed, this tea has a greenish golden color, a refreshing aroma and a good balance between astringency and sweetness. Sencha contains more of the beneficial nutrient catechin than other green teas, because it is grown in full sunlight, thus it becomes yellowish green in colour. Our Sencha is one of our highest-quality Sencha teas. Each leaf is specially selected and carefully picked by our farmers' skilled hands. Tea leaves which are handpicked have a remarkably enhanced flavor that is far superior to leaves which are harvested by machine. This is because tea trees whose leaves are harvested by hand grow much better than tea trees whose leaves are harvested by machine.
