Bai Mu Dan or White Peony is a modern-style white tea that is comprised of buds and leaf. Whereas traditional Chinese white tea was once only Yin Zhen (made from buds only) the need arose for there to be more white tea. In the 20th century, tea makers began to incorporate the leaf from the tea bushes with the buds. Varying percentages of leaf-to-bud are used to make several different modern-style white teas including Bai Mu Dan. These modern-style white teas are found in varying grades and quality. After the tea buds are plucked and Yin Zhen white tea is made, Bai Mu Dan is made. Good Bai Mu Dan is a high-grade white tea. And, this Bai Mu Dan is a treat to offer. It has a high percentage of buds to leaf and is clean and fresh tasting.

 

Many do not realize that the fresh leaf materials used to make white tea is not de-enzymed as are all other styles of Chinese teas, and it undergoes slight withering (as does black tea) which oxidizes the leaf and buds just a little. This is one reason why Chinese white teas are so smooth and can be reminiscent in flavor of drinking a very mild black tea . Bai Mu Dan is an easy steeper and, in the cup, will be smooth with a floral aroma. It has been given sun-drying, a short oxidizing wither and is finally air dried to keep the leaf large and intact and prevent the color from darkening. The leaf is green on one side and silvery grey on the other side, and there is a generous quantity of large and juicy buds. While this may sound like an easy process, making quality white tea requires skill and experience.

 

◆ Origin: Fujian Province, China.Grown: 2000 - 4000ft above sea level. Fuding City, located in the northeast of Fujian Province, is known as the hometown of Chinese white tea for its profound tea cultivation. The Taimu mountain scenic area in this region made itself on the list of national landscapes and scenic spots for its beautiful mountains, blue waters and multicolored human scenes. Far away from pollution, seas of clouds enshroud the peaks all year around and the air quality here attains Grade I, this land is ideal for tea. And more, the fertile upland soil (mainly red/yellow soil) here and the mild subtropical marine monsoon climate also provide idea conditions for tea plants growth.
